  • 2 lbs Russet Potatoes peeled and quartered
  • 1/2 cup Whole Milk
  • 1/4 cup Unsalted Butter cut into pieces
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 2 tablespoons Sour Cream optional
  • 1/2 teaspoon Garlic Powder optional
  • 2 tablespoons Chives chopped, for garnish (optional)

Method
 

Instructions
  1. Place potatoes in a large pot and cover with cold water. Add about an inch of water above the potatoes. Bring to a boil over high heat.
  2. Reduce heat to medium-low and simmer for 15-20 minutes, or until potatoes are easily pierced with a fork.
  3. Drain potatoes thoroughly in a colander. Let them sit for a few minutes to steam off excess moisture.
  4. Return potatoes to the pot. Add milk, butter, salt, pepper, and optional garlic powder.
  5. Mash potatoes until smooth and creamy using a potato masher or electric mixer. If using a mixer, start on low and gradually increase to medium speed.
  6. Stir in sour cream (if using). Taste and adjust seasoning as needed.
  7. Garnish with chopped chives (if using) and serve immediately.

Notes

For extra fluffy potatoes, consider using a ricer instead of a masher. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
