- Place potatoes in a large pot and cover with cold water. Add about an inch of water above the potatoes. Bring to a boil over high heat.
- Reduce heat to medium-low and simmer for 15-20 minutes, or until potatoes are easily pierced with a fork.
- Drain potatoes thoroughly in a colander. Let them sit for a few minutes to steam off excess moisture.
- Return potatoes to the pot. Add milk, butter, salt, pepper, and optional garlic powder.
- Mash potatoes until smooth and creamy using a potato masher or electric mixer. If using a mixer, start on low and gradually increase to medium speed.
- Stir in sour cream (if using). Taste and adjust seasoning as needed.
- Garnish with chopped chives (if using) and serve immediately.
Notes
For extra fluffy potatoes, consider using a ricer instead of a masher. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
