  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Ginger
  • 1 teaspoon Ground Cinnamon
  • 0.5 teaspoon Ground Cloves
  • 0.5 teaspoon Ground Allspice
  • 0.25 teaspoon Salt
  • Optional Coarse Sugar for sprinkling

Method
 

Instructions
  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg, molasses, and vanilla.
  3. In a separate bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, allspice, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. Roll the dough into 1-inch balls and place them on the prepared baking sheets, leaving some space between each cookie.
  6. Sprinkle with coarse sugar, if desired.
  7. Bake for 10-12 minutes, or until the edges are lightly browned. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra chewy cookies, chill the dough for at least 30 minutes before baking. Store cookies in an airtight container at room temperature for up to a week.
