Instructions
  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish.
  2. In a large bowl, combine pecans, granulated sugar, brown sugar, flour, and salt for the filling.
  3. Stir in vanilla extract and melted butter. Whisk in eggs and corn syrup until well combined.
  4. Pour the pecan filling into the prepared baking dish.
  5. In a separate bowl, whisk together flour, sugar, baking powder, baking soda, and salt for the topping.
  6. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined. Do not overmix.
  7. Drop spoonfuls of the cobbler topping evenly over the pecan filling.
  8. Bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbly. Let cool slightly before serving.

Notes

For a richer flavor, toast the pecans before adding them to the filling. You can also use a different type of syrup, such as maple syrup, for variation. Serve warm with a scoop of vanilla ice cream or whipped cream.
