- Refrigerate a can of full-fat coconut milk overnight.
- Scoop out the thick, solidified coconut cream from the top of the can, leaving the watery liquid behind. You should have approximately 1 cup of coconut cream.
- If you don't have enough coconut cream, add more coconut cream or heavy cream to reach 1 cup.
- In a blender, combine the coconut cream, pumpkin puree, maple syrup, vanilla extract, pumpkin pie spice, cinnamon, ginger, cloves, and salt.
- Blend until completely smooth and creamy.
- Taste and adjust sweetness as needed by adding more maple syrup.
- Pour into an airtight container and refrigerate for at least 2 hours to allow the flavors to meld. This will also thicken the creamer.
- Enjoy your homemade pumpkin spice creamer in your coffee, tea, or other favorite hot beverage! It will keep in the refrigerator for up to 1 week.
Notes
For a richer creamer, use full-fat canned coconut milk and chill it thoroughly. Adjust the spices to your liking. A dash of nutmeg would be a delicious addition!
