  • 1 15 ounce can Whole kernel corn (canned) drained
  • 1 15 ounce can Creamed corn (canned)
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Milk
  • 0.5 cup Vegetable oil
  • 2 Large eggs lightly beaten
  • 0.5 cup Honey
  • 0.25 cup Butter melted

Method
 

Instructions
  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, combine the drained whole kernel corn, creamed corn, flour, baking powder, salt, and pepper. Mix well.
  3. In a separate bowl, whisk together the milk, oil, and eggs until light and frothy.
  4. Add the wet ingredients to the dry ingredients and stir gently until just combined. Do not overmix.
  5. Pour the batter into the prepared baking dish.
  6. In a small bowl, whisk together the honey and melted butter.
  7. Pour the honey-butter mixture evenly over the top of the corn casserole.
  8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  9. Let cool slightly before serving. Enjoy!

Notes

For a richer flavor, use brown sugar instead of some of the honey. You can also add ½ cup of shredded cheddar cheese to the batter for a cheesy twist. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
