- Preheat oven to 400°F (200°C).
- Toss potatoes with 1 tablespoon olive oil, salt, and pepper. Spread in a single layer on a large baking sheet.
- In a large skillet over medium-high heat, heat remaining olive oil. Add beef cubes and sear on all sides until browned, about 3-4 minutes per side. Remove beef from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add minced garlic and thyme; cook for 1-2 minutes, or until fragrant, being careful not to burn the garlic.
- Add the seared beef cubes to the skillet with the garlic butter. Toss to coat. Transfer the beef to the baking sheet with the potatoes.
- Bake for 20-25 minutes, or until the potatoes are tender and the beef is cooked to your desired internal temperature (use a meat thermometer). Internal temperature should reach at least 145°F (63°C) for medium-rare beef.
- Stir in chopped parsley before serving.
Notes
For extra flavor, marinate the beef cubes in a mixture of garlic, thyme, and olive oil for at least 30 minutes before cooking. You can also add other vegetables to the baking sheet, such as carrots, onions, or bell peppers.
