  • 0.5 cup Red Onion finely chopped
  • 1 Jalapeño Pepper seeded and minced (optional, adjust to taste)
  • 0.5 cup Cilantro chopped
  • 0.25 cup Lime Juice
  • 2 tablespoons Sugar (or to taste)
  • 0.25 teaspoon Salt (or to taste)
  • 1 teaspoon Fresh Lime Zest optional, for extra citrus flavor

Instructions
  1. In a medium bowl, gently combine the diced peaches, red onion, jalapeño (if using), cilantro, and lime zest (if using).
  2. In a small bowl, whisk together the lime juice, sugar, and salt until the sugar is completely dissolved.
  3. Pour the lime juice mixture over the peach mixture and stir gently to combine. Be careful not to overmix, as this can cause the peaches to become mushy.
  4. Taste and adjust seasonings as needed, adding more sugar, lime juice, salt, or jalapeño to your preference.
  5. Let the salsa sit for at least 15 minutes at room temperature to allow the flavors to meld. This step is optional but recommended.
  6. Serve immediately with tortilla chips, as a topping for grilled chicken or fish, or as a topping for tacos or burritos.
  7. For best results, chill for 30 minutes before serving for a refreshing twist.

Notes

For a spicier salsa, add more jalapeño or a pinch of cayenne pepper. You can also add other fruits like mango or berries for a unique flavor combination. Store leftovers in an airtight container in the refrigerator for up to 3 days.
