Instructions
- In a medium bowl, gently combine the diced peaches, red onion, jalapeño (if using), cilantro, and lime zest (if using).
- In a small bowl, whisk together the lime juice, sugar, and salt until the sugar is completely dissolved.
- Pour the lime juice mixture over the peach mixture and stir gently to combine. Be careful not to overmix, as this can cause the peaches to become mushy.
- Taste and adjust seasonings as needed, adding more sugar, lime juice, salt, or jalapeño to your preference.
- Let the salsa sit for at least 15 minutes at room temperature to allow the flavors to meld. This step is optional but recommended.
- Serve immediately with tortilla chips, as a topping for grilled chicken or fish, or as a topping for tacos or burritos.
- For best results, chill for 30 minutes before serving for a refreshing twist.
Notes
For a spicier salsa, add more jalapeño or a pinch of cayenne pepper. You can also add other fruits like mango or berries for a unique flavor combination. Store leftovers in an airtight container in the refrigerator for up to 3 days.
