Easy Crock Pot Sweet Potato Casserole

  • 3 lbs Sweet Potatoes Peeled and cubed
  • 1/2 cup (1 stick) Unsalted Butter Melted
  • 1 cup Light Brown Sugar Packed
  • 1/2 cup Whole Milk
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Ground Cinnamon
  • 1/4 teaspoon Ground Nutmeg
  • 1/4 teaspoon Salt Pinch
  • 1/2 cup Chopped Pecans or Walnuts Optional

  • Slow Cooker/Crock Pot
  • Mixing Bowl
  • 9x13 inch baking dish
  • Potato masher or electric mixer

Method
 

Instructions
  1. Place cubed sweet potatoes in your crock pot.
  2. In a medium bowl, whisk together the melted butter, brown sugar, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt.
  3. Pour the wet ingredients over the sweet potatoes in the crock pot.
  4. Cook on low for 6-8 hours, or on high for 3-4 hours, or until the sweet potatoes are very tender.
  5. Remove from the crock pot and mash with a potato masher or electric mixer until smooth. Stir in nuts, if using.
  6. Transfer the mashed sweet potatoes to a greased 9x13 inch baking dish.
  7. Bake at 350°F (175°C) for 20-25 minutes, or until heated through and lightly browned on top. (This step is optional, but adds a nice topping.)
  8. Serve warm.

Notes

For a richer flavor, use maple syrup instead of some of the brown sugar. You can also add a pinch of ginger or allspice to the spice mix. Leftovers can be stored in the refrigerator for up to 3 days.
