Ingredients
  

Pasta and Vegetables
  • 8 ounces Rotini pasta
  • 1 large Cucumber peeled, seeded, and diced
  • 1/2 cup Red onion thinly sliced
  • 1/2 cup Cherry tomatoes halved
Cheese and Herbs
  • 1/2 cup Feta cheese crumbled
  • 1/4 cup Fresh dill chopped
  • 1/4 cup Fresh mint chopped
Dressing
  • 1/2 cup Plain Greek yogurt
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 clove Garlic minced
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper

Method
 

Instructions
  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. While pasta cooks, prepare the vegetables: peel, seed, and dice the cucumber; thinly slice the red onion; and halve the cherry tomatoes.
  3. Chop the fresh dill and mint.
  4. In a large bowl, combine the cooked pasta, cucumber, red onion, tomatoes, feta cheese, dill, and mint.
  5. In a small bowl, whisk together the Greek yogurt, olive oil, lemon juice, minced garlic, salt, and pepper.
  6. Pour the dressing over the pasta mixture and gently toss to combine.
  7. Refrigerate for at least 30 minutes to allow the flavors to meld before serving. Garnish with extra dill or feta if desired.

Notes

For a richer flavor, use full-fat Greek yogurt. You can also add other vegetables like bell peppers or olives. If you don't have fresh herbs, you can substitute with 1 teaspoon of dried dill and 1 teaspoon of dried mint.
