- Cook pasta according to package directions. Drain and rinse with cold water.
- While pasta cooks, prepare the vegetables: peel, seed, and dice the cucumber; thinly slice the red onion; and halve the cherry tomatoes.
- Chop the fresh dill and mint.
- In a large bowl, combine the cooked pasta, cucumber, red onion, tomatoes, feta cheese, dill, and mint.
- In a small bowl, whisk together the Greek yogurt, olive oil, lemon juice, minced garlic, salt, and pepper.
- Pour the dressing over the pasta mixture and gently toss to combine.
- Refrigerate for at least 30 minutes to allow the flavors to meld before serving. Garnish with extra dill or feta if desired.
Notes
For a richer flavor, use full-fat Greek yogurt. You can also add other vegetables like bell peppers or olives. If you don't have fresh herbs, you can substitute with 1 teaspoon of dried dill and 1 teaspoon of dried mint.
