  • 1 pound Elbow Macaroni
  • 1/2 cup Butter
  • 1/2 cup All-Purpose Flour
  • 3 cups Milk Whole milk recommended for creaminess
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 4 cups Shredded Cheddar Cheese
  • 1/2 cup Shredded Parmesan Cheese Optional
  • 1/2 cup Breadcrumbs Optional, for topping

Method
 

Instructions
  1. Cook macaroni according to package directions. Drain well and set aside.
  2. In a large saucepan, melt butter over medium heat. Whisk in flour until smooth.
  3. Gradually whisk in milk until smooth and no lumps remain. Stir in salt and pepper.
  4. Bring the mixture to a simmer, stirring constantly, until it thickens slightly (about 2-3 minutes).
  5. Pour the cheese sauce into the slow cooker. Stir in cheddar cheese and Parmesan cheese (if using) until melted and smooth.
  6. Add the cooked macaroni and stir to coat completely with the cheese sauce.
  7. Cook on low for 2-3 hours, or until heated through and bubbly, stirring occasionally. If desired, top with breadcrumbs in the last 30 minutes of cooking.
  8. Serve immediately.

Notes

For a spicier mac and cheese, add a pinch of cayenne pepper or a dash of your favorite hot sauce to the cheese sauce. You can also experiment with different cheeses, such as Gruyere, Fontina, or a blend of your favorites.
