  • 3/4 cup Packed light brown sugar
  • 1 20 ounce can Pineapple slices, drained (reserve juice)
  • 1/2 cup Maraschino cherries, drained

  • 1 1/2 cups All-purpose flour
  • 1 1/2 teaspoons Baking powder
  • 1/4 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter, softened (1 stick)
  • 1 1/4 cups Granulated sugar
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 1/2 cup Buttermilk (or 1/2 cup milk + 1/2 teaspoon white vinegar or lemon juice)

Method
 

Instructions
  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. Spread melted butter evenly in the prepared pan. Sprinkle brown sugar over the butter.
  3. Arrange pineapple slices in a single layer over the brown sugar, close together. Place a cherry in the center of each ring.
  4. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  5. In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  6. Gradually add dry ingredients to wet ingredients, alternating with buttermilk, beginning and ending with dry. Mix until just combined; do not overmix.
  7. Pour batter over pineapple topping. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let cool in the pan for 10-15 minutes before inverting onto a serving plate. Serve warm or at room temperature.

Notes

For a richer flavor, use dark brown sugar. You can also add a sprinkle of cinnamon to the batter for a warm spice note. Leftovers can be stored in an airtight container at room temperature for up to 3 days.
