- Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.
- Make the crust: Combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Divide evenly among muffin cups, pressing firmly into the bottom.
- Make the cheesecake filling: Beat cream cheese and sugar until smooth. Beat in eggs one at a time, then stir in vanilla and sour cream until just combined. Do not overmix.
- Assemble: Spoon cheesecake filling over crusts, filling about ¾ full.
- Make the apple crisp topping: Combine apples, flour, brown sugar, cinnamon, and nutmeg. Toss gently. Sprinkle over cheesecake filling. Dot with butter pieces.
- Bake for 25-30 minutes, or until set around the edges and topping is golden brown.
- Cool completely in the muffin tin before serving. For faster cooling, place on a wire rack.
Notes
For a larger version, use a 9x13 inch baking dish and increase the ingredients proportionally. You can also experiment with different types of apples or add a sprinkle of chopped nuts to the topping.
