  • Mixing Bowl
  • Mini Muffin Tin
  • Cookie Cutter (2 1/2 inch)

Method

Instructions
  1. Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin or use paper liners.
  2. In a medium bowl, combine cranberries, red onion, Dijon mustard, olive oil, thyme, salt, and pepper. Toss gently to combine.
  3. Unroll the pie crust and use a 2 1/2-inch cookie cutter or a knife to cut out circles. Press each circle into the prepared muffin tin cups.
  4. Divide the cranberry mixture evenly among the tartlet shells. Top each with a few pieces of brie cheese.
  5. For a shiny finish (optional): Brush the tops of the tartlets with beaten egg.
  6. Bake for 15-20 minutes, or until the crust is golden brown and the brie is melted and bubbly.
  7. Let the tartlets cool in the tin for a few minutes before serving. Enjoy warm or at room temperature.

Notes

These tartlets are best served fresh. For a richer flavor, use a higher-quality brie. You can also add a sprinkle of pecans or walnuts to the filling for added crunch.
