Ingredients
  

Meat Layer
  • 1 pound ground beef 80/20 preferred for flavor
  • 6 slices bacon cooked and crumbled
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
Sauce and Seasoning
  • 1 (10 ounce) can diced tomatoes with green chilies undrained
  • 1/2 cup beef broth
  • 1/4 cup sugar-free ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Pinch red pepper flakes optional, for heat
Creamy Topping & Cheese
  • 2 cups shredded cheddar cheese (divided into 1 cup for mixing and 1 cup for topping)
  • 1/2 cup mayonnaise full-fat
  • 4 ounces cream cheese softened and cubed

Method
 

Prep and Brown the Beef Base
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish or an equivalent 3-quart casserole dish.
  2. In a large skillet over medium-high heat, brown the ground beef along with the finely chopped onion. Drain off any excess fat once the beef is fully browned. Reduce the heat to medium. Add the minced garlic to the skillet and cook for 1 minute until fragrant.
Simmer and Prepare Topping
  1. Stir in the diced tomatoes with green chilies (undrained), beef broth, sugar-free ketchup, yellow mustard, dried oregano, salt, pepper, and red pepper flakes (if using). Bring the mixture to a simmer and cook for 5 to 7 minutes, allowing the liquid to reduce slightly and the flavors to meld.
  2. While the beef mixture simmers, prepare the creamy layer. In a medium bowl, combine the softened cream cheese, mayonnaise, and half (1 cup) of the shredded cheddar cheese. Mix thoroughly until smooth and well combined.
Assembly and Bake
  1. Pour the seasoned ground beef mixture evenly into the prepared baking dish. Spread it out flat.
  2. Evenly drop spoonfuls of the cream cheese and mayonnaise mixture over the top of the beef. Gently spread the creamy topping to cover the beef entirely. Sprinkle the crumbled bacon evenly over the creamy layer.
  3. Sprinkle the remaining 1 cup of shredded cheddar cheese over the top of the casserole.
  4. Bake for 20 to 25 minutes, or until the cheese is melted, bubbly, and lightly browned on the edges, and the casserole is heated through.
  5. Remove the casserole from the oven and let it rest for 5 to 10 minutes before slicing and serving. Garnish with additional fresh toppings like chopped dill pickles, diced tomatoes, or a drizzle of sugar-free ranch dressing, if desired.

Notes

For an even richer flavor, cook the chopped onion directly in the reserved bacon grease before adding the ground beef. If you prefer a thinner consistency, you can add 1/4 cup of heavy cream to the cream cheese mixture.
